Ronnie’s Chicken Parmigiana Recipe (Food for Life)

Brooke and I challenged each other to a Food for Life Cook-Off. For this cook, we use one of our favorite brands, Food for Life Baking Company, to create some special dishes that we can share with everyone. We created three different categories/rounds: 

1.     Gourmet breakfast – A fun breakfast meal that is “jazzed” up a bit

2.     Back to the basics – A classic meal using the Food for Life product in its original form

3.     Thinking outside the box – Using the Food for Life products in a different form than they are originally intended for. 

 

Why We Chose Food for Life Baking Co. 

Food for Life products is easy to stand behind as they are one of the healthiest options for their food types. A majority of the products use sprouted grains and are certified organic. They don’t use any genetically modified organisms (GMOs) or artificial ingredients, preservatives, shortening, or refined sugars. They also use a unique slow-bake process that helps to preserve the natural fibers and bran befits of the grains, making the products a much healthier option. That is why we chose to shift to a better bread with Food for Life!

Why Chicken Parmigiana (AKA Chicken Parm)?

For my “thinking outside the box” round, I chose to make chicken parmigiana. They were out of stock with pasta at the time of doing our cook-off, but the featured Food For Life product in this dish is the bread crumbs. I crumbled the bread to make my own breadcrumb mix. See the recipe below to try out this delicious dish. 

At the Top of the List

I feel like chicken parmigiana is on the top (at least top five) of everyone’s favorite Italian meals. I have seen people exclude bread crumbs from their ingredients to cut carbs and added preservatives. This is why I thought making bread crumbs could give those people hope about having your cake and eating it too! You can have those delicious bread crumbs if you switch to a better bread, and make your own!

Ingredients:

  • 4 (or more) slices of Food for Life Bread (found in the frozen section at the grocery store);

  • 4-6 pieces of chicken breasts;

  • 2 Eggs (or 3 if you are doing more than 6 pieces of chicken);

  • 2 Tablespoons of Milk;

  • Plenty of Olive Oil;

  • Parmigiana Cheese;

  • Mozzarella Cheese;

  • Tomato;

  • Marinara sauce;

  • Pasta of choice;

  • Salt and Pepper.

 

Directions:

  1. Make bread crumbs from the bread slices by hand or with a food processor. Add parmigiana cheese, salt, and pepper;

  2. Mix eggs and milk in a bowl - mix well;

  3. Dip chicken breast into the egg mixture and make sure both sides and edges are well covered;

  4. Place chicken breast on a bed of bread crumbs and be sure both sides and edges are well covered in crumbs;

  5. Preheat the stovetop pan with a generous amount of olive oil;

  6. Cook and flip once the side is well browned;

  7. While the chicken is browning, place a layer of sauce in the baking dish;

  8. Once both sides are well cooked remove them from the stove;

  9. Place chicken breasts into a baking dish, cover with marinara sauce, and place in the oven at 350 degrees for about 30 minutes;

  10. Boil water for pasta;

  11. Take the chicken dish out of the oven when almost finished adding mozzarella cheese and tomato;

  12. Place pasta and chicken parmigiana on a plate and add fresh basil;

  13. ENJOY!
